Cuter Cutter

How do you make soft , cake-like sugar/cut out cookies?
I have a cute ice cream cone shaped cookie cutter that I'd like to use to make vanilla sugar cookies. I don't want hard and crunchy cookies. - which is what always seems to happen unless you eat them immediately. If you know how to make soft/cake-like cookies that can be cut-out, please share. (Would prefer no cut and paste recipes from cooking sites - thanks)
the best thing I have realized is if I use half Margarine and half butter so if the recipe calls for 2 cups of butter use 1 margarine and 1 butte they were so soft and stayed soft for a few days after....It was great!
